Suppressing 'Composer' Display
I know I've seen an option for this somewhere, but I can't find it.

I think you're searching for the option Track list: Show composer which can be found at Settings / Advanced / Further options:
Simply double click on the option to set it to "No". A final click on "OK" is required to save the settings then.
